The Cook and The Cardiologist Chocolate Too! Diet:

We used to be the chocoholic and the Cardiologist. HA! See any problem there? There used to be, well, a small one. Bob loves sweets too, but he was also seeing the growing epidemic of heart disease, high blood pressure, high cholesterol, and type 2 diabetes.


But I did like to cook. (Just 2-3 times a week, I make lots & freeze.) Over the years, especially during my various Weight Gain Panics, Bob coached me on every new finding in Nutrition and Cardiology ("just olive & canola oil, lose the red meat, look how much sugar’s in this ketchup!"). In time I became an eager creator of healthier recipes.


But I still missed rich desserts, brownies, muffins, and everything chocolate.


Then we heard about the miracle new cocoa findings. AND discovered that you can substitute protein powder for flour, AND that milled flaxseed is much healthier than whole grains!


How wonderful, we thought, these super healthy ingredients would be to help people with diabetes or weight loss issues to avoid unnecessary carbs and enjoy luscious baked goodies without worry.


Then it occurred: How wonderful this would be for everyone’s health!


Excited, I spent a long time trying to invent recipes -- especially baked yummies (BROWNIES! PANCAKES!) -- that substitute protein powder for flour. I also discovered that certain herbs & spices contain vastly more antioxidants than even broccoli, spinach, brightly colored veggies and fruit -- which are still important...so sprinkle cinnamon on your apple slices; lots of oregano on your veggies.


The result of experimenting, getting frustrated, and trying and trying again? Recipes for flourless, truly sugar-free brownies, blondies, pancakes, cookies, tortillas, tacos, bread, rolls, pies, pizza, and more.
